Thistle honey is a unique product of its kind. It is produced in several areas, hilly, mountainous, flat, but especially in the river areas, pastures and in the unpolluted countyside.
Wild thistle (Cardus) are very common plants in Sardinia. They begin to flourish from the first months of the year around March and April, and the flowering lasts until early May; of great diffusion on the territory, we find thistle plants especially in the river areas, pastures and in the unpolluted countryside.
The appearance may vary from a thorny white flower held by a slender stem of 30 or 40 cm, to plants of considerable size (about 150 cm) of purple red flowers that change color depending on the flower maturity stage. Some of these species are harvested to be preserved in oil, as is done with the artichoke flowers.
Thistle honey is amber color, with lighter shades; when crystallizes its color vira in much lighter tones; crystallization is usually quite fast, changing to a fairly compact mass of amber color.
Taste and aroma
It is a honey with a distinctive and distinctive flavor, its intense scent remembers that of the flowers of the Mediterranean country rich in very sweet scents. The aroma is very rich and vaguely spicy: it remembers the cinnamon with light presence of nutmeg; shows a very sweet floral component that remembers the jams of red fruits and a stronger and slender than just tanned leather. In the throat it releases all its character with a distinctive and distinctive bouquet and gives it a very sweet and persistent flavor.
