The Garda Bresciano D.O.P. Olive Oil from Frantoio Manestrini is produced in the hills along the Brescia shore of Lake Garda, in a territory where olive growing has ancient origins dating back to Roman times. The history of the olive mill is deeply connected to the local culture: the company headquarters are located near an ancient Franciscan monastery dating back to the 14th century, a place that has witnessed the agricultural vocation of this area for centuries. Founded by Egidio Manestrini in 1960, the olive mill has evolved while preserving its unwavering dedication to quality, transforming the fruits of the land into an internationally recognised gastronomic masterpiece.
Production follows strict regulations requiring the use of the most prized olive varieties of the area, particularly Casaliva, complemented by Leccino and Frantoio. The olives are carefully harvested at the veraison stage, a crucial phase for ensuring freshness of aromas and product stability. Milling takes place within a very short time, usually within 24 hours of delivery to the olive mill, using a modern continuous-cycle plant that performs rigorous cold extraction. This technical process preserves the organoleptic nuances and the natural richness of polyphenols in the raw material, while ensuring extremely low free acidity.
From a sensory perspective, this oil has a green-gold colour with brilliant reflections. The aromatic profile is clean and elegant, characterised by a medium-intensity olive fruitiness, accompanied by notes of white almond and delicate aromatic herbs. On the palate, the structure is balanced and refined; bitterness and the final peppery note are masterfully harmonised, leaving the mouth clean with a very pleasant lingering almond finish.
