Dark Chocolate Almonds - La Fattoria Della Mandorla
The Dark Chocolate Almonds by La Fattoria della Mandorla are a refined gourmet dragée that celebrates the excellence of Apulian pastry-making.
At the heart of each praline is an organic Toritto almond of the native Filippo Cea variety, delicately roasted to achieve a crisp and crumbly texture.
The almond is then coated in a glossy shell of fine dark chocolate, creating a harmonious flavour contrast between the intensity of cocoa and the buttery sweetness of the fruit from the Alta Murgia.
A premium confectionery specialty, ideal as a refined gift idea or for an everyday moment of pure indulgence.
Dark Chocolate Almonds - La Fattoria Della Mandorla
The Dark Chocolate Almonds represent a perfect union between Apulian agricultural tradition and the art of artisanal confectionery, created by La Fattoria della Mandorla. This company grows its raw materials through a short and entirely organic supply chain in Toritto, an area located at the foot of the Alta Murgia National Park. The decision to showcase the prized native Filippo Cea variety, renowned throughout the gastronomic world for its round shape and rich aromatic profile, is combined here with a careful selection of cocoa to create a confection capable of expressing the excellence of Mediterranean fine pastry.
The production process involves rigorous stages that place respect for the raw material at its centre. After harvesting and shelling, the organic almonds undergo controlled thermal roasting. This delicate dry process is carefully calibrated not to compromise the kernel, but to develop a light, golden and crumbly texture, releasing its naturally occurring essential oils. The roasted almonds are then placed in traditional confectionery pans, where they are progressively coated with an even layer of high-quality dark chocolate. This slow panning process ensures a smooth, glossy surface and a carefully balanced chocolate coating that does not overpower the almond.
An interesting fact about the Filippo Cea variety lies in its history: the mother tree was identified in the Toritto area at the beginning of the 20th century, and since then it has been regarded as a biodiversity heritage to be protected. From an organoleptic perspective, these coated almonds offer a perfect balance of flavours: with every bite, the rich and pleasantly bitter first note of dark chocolate gives way to the persistent underlying sweetness and distinctive roasted character of the almond. Its compact yet crumbly texture creates an exceptional interplay of textures on the palate, making each individual praline a rounded and well-balanced sensory experience.
In culinary applications, the versatility of this gourmet product is remarkable. It is ideal to enjoy on its own as an elegant after-dinner treat, offering a refined indulgence to share with guests. In home preparations and pastry creations, these chocolate-covered almonds can be used to decorate modern cakes, semifreddo desserts and spoonable mousses. Roughly chopped with a knife, they become an exceptional contrasting element for enriching artisanal ice cream, small pastries or for garnishing cups of coffee and fine Italian liqueurs, adding a touch of visual and aromatic distinction.
