The initial production stage involves processing the semolina with water in a controlled environment in order to obtain a balanced and stable dough. This step is essential for ensuring a homogeneous structure suitable for the subsequent artisanal shaping, one of the distinctive elements of the production process.

The pasta is then subjected to bronze-die extrusion, a technique that gives the surface a rough and porous texture. This characteristic is not merely aesthetic but also functional, enhancing the pasta’s ability to hold sauces and improving the integration between pasta and sauce during tasting.

A central role is played by slow drying at low temperature, which helps preserve the structure of the product and stabilize its shape. This process contributes to the final texture and cooking performance, essential qualities for pasta intended for both traditional and contemporary preparations.
