From the same grapes destined for Sciala, late harvested when fully ripe and carefully selected in the vineyard, a wine with an important and complex aromatic structure is born.
The vineyards (100% Vermentino) are espalier-trained with Guyot pruning, in soils deriving from medium-mix granite weathering. After destemming, the must remains in contact with the skins for 12/24 hours at a temperature below 10 ° C. 50% of the fermentation takes place in large unroasted French oak barrels and 50% in steel and cement tanks. The assembly then evolves in the presence of its yeasts in steel and cement tanks for 6 months. Finally, it rests in the bottle for at least another 6 months.
Wide-ranging wine: fish cuisine, white meats, fish soups, blue and medium-aged cheeses.
Color: straw yellow with golden reflections.
Smell: intense bouquet with notes of ripe fruit and Mediterranean scrub.
