The N°4 Grand Cru La Ramata from the I & P agricultural company (Ione Zobbi) represents the brightest and most fruit-forward expression of olive growing in the Viterbo area of Tuscia. This extra virgin olive oil is a Leccino monocultivar produced in the eponymous La Ramata olive grove, a plot situated on deep, well-drained volcanic soil, which provides the trees with a constant supply of mineral nutrients. The I & P philosophy elevates this variety to a true Cru, managing the plot with sustainable farming techniques to preserve the delicate aromatic character typical of high-quality Leccino. The olive harvest is precisely scheduled during the initial stage of veraison, ensuring an ideal concentration of polyphenols and superior organoleptic freshness.

The technical processing follows rigorous standards: the olives from the La Ramata olive grove are milled at the company olive mill within a maximum of 4 hours. The cold-extraction method, consistently maintained below 27°C, uses a continuous-cycle system operating in complete absence of oxygen. This process is essential for protecting the primary aromas and vegetal notes of Leccino, preventing the oxidation of the most delicate volatile compounds. The premium-category olive oil is then immediately filtered to remove every impurity and stored in stainless-steel tanks under a nitrogen blanket, ensuring long-lasting organoleptic stability and brilliant clarity until final packaging.

On the palate, Grand Cru La Ramata surprises with its velvety softness: distinct notes of green almond, apple and a hint of lamb's lettuce emerge. The bitterness and spiciness are present in a very delicate and harmonious way, making the oil exceptionally smooth and pleasant to taste. An interesting detail about this Cru lies in the name "La Ramata", which identifies an area of Canino particularly suited to olive cultivation, where the olive-tree canopies benefit from diffused sunlight that promotes even fruit ripening.
