This historic company manages a short and entirely organic supply chain near Toritto, an area characterised by limestone soils and the favourable climate of the Alta Murgia National Park. The exclusive use of the native Filippo Cea cultivar makes it possible to create a sugared almond with exceptional sensory complexity. The natural sweetness of this variety meets the purity of sugar, offering a product of outstanding quality for the most discerning palates.
The processing method follows traditional and meticulous stages to ensure excellent quality standards and a balanced tasting experience. After harvesting and manual selection, the organic almonds undergo uniform and gentle thermal roasting, which removes internal moisture and enhances their natural fragrance. The whole almonds are then transferred to traditional confectionery coating pans, where artisans gradually build up an ultra-thin sugar coating.
