      Classic Saffron Malloreddus - Araj

Araj Classic Saffron Malloreddus represent one of the most authentic interpretations of the Sardinian pasta-making tradition, deeply connected to the gastronomic culture of the Campidano region and the culinary habits of Sardinian families. This pasta shape, also known as Sardinian gnocchetti, is one of the most recognisable symbols of Sardinian regional cuisine, thanks to its ability to adapt to a wide range of recipes while preserving its original identity.

Production is based on the use of durum wheat semolina grown in Sardinia, selected to ensure consistent quality and a strong connection with the Sardinian territory. The raw material undergoes stone milling, a traditional method that helps preserve the structure of the durum wheat and its natural characteristics. The dough is prepared using a cold-mixing process, avoiding aggressive processing and preserving the quality of the semolina. This approach results in a balanced pasta that remains stable during cooking and has an excellent ability to hold sauces and seasonings.

One of the product's distinctive features is the presence of San Gavino Monreale saffron, an iconic ingredient of Sardinia’s agricultural tradition. Incorporated directly into the dough, it helps create a natural and recognisable colour while strengthening the product’s connection with local gastronomic tradition. The use of Sardinian saffron does not alter the structure of the pasta but enhances its visual and cultural identity, making the product immediately recognisable among Italian regional specialities.

The production process includes bronze die extrusion, which gives the Malloreddus a rough and porous surface, essential for improving the adhesion of sauces. Drying takes place slowly at a low temperature for approximately 24 hours, ensuring stability and uniformity of the pasta shape. This stage is essential for preserving the pasta’s texture and ensuring optimal cooking performance while maintaining consistency with the methods of Sardinian artisanal tradition.

From a gastronomic perspective, Saffron Malloreddus are suitable for numerous preparations from Mediterranean cuisine. They are particularly well suited to meat-based sauces, traditional ragùs, tomato-based sauces, and more contemporary interpretations of regional cuisine. Their compact, ridged structure allows for an even distribution of the sauce, improving the overall balance of the dish and enhancing every ingredient.

The recommended cooking time is approximately 9 minutes, ideal for achieving an al dente texture that enhances the structure of the pasta shape. The final result is a pasta that combines tradition, local ingredients, and artisanal craftsmanship, consistently expressing Sardinia’s gastronomic identity and the value of its traditional products.
