Their distinctive porous surface and compact shape allow them to capture and enhance sauces, elevating both traditional regional recipes and more contemporary preparations.
A pasta shape that embodies the connection between artisanal craftsmanship, local territory, and the gastronomic culture of the island.
Classic Malloreddus - Araj
Araj Classic Malloreddus are one of the most authentic expressions of Sardinia’s pasta-making tradition. Also known as the typical Sardinian gnocchetti, they represent a symbol of the island’s cuisine and still maintain a strong connection with the gastronomic culture of the Campidano, the region where this pasta shape originated and spread through generations.
Production by Araj begins with a raw material closely linked to the local territory: durum wheat grown in Sardinia, which is then stone-milled. This method produces semolina that retains the typical characteristics of the grain, enhancing the quality of the raw material from the earliest stages of processing. The name Araj, which in local tradition evokes the concept of a “fresh breeze,” reflects the company’s commitment to preserving a production approach deeply rooted in Sardinian identity.
One of the distinctive aspects of these Malloreddus is their production process. The dough is prepared using a cold-mixing process, a choice that allows the semolina to be worked without exposing it to high levels of thermal stress. The pasta is then bronze die-extruded, a traditional technique that gives the surface its characteristic roughness. The final stage involves slow, low-temperature drying for approximately 24 hours, a fundamental step in achieving a balanced texture and preserving the characteristics of the pasta shape.
Visually, Classic Malloreddus are distinguished by their pale yellow colour and slightly rough surface. Their compact shape and natural porosity allow them to capture sauces and distribute them evenly during tasting. It is precisely this characteristic that makes them particularly appreciated in traditional recipes, where the relationship between pasta and sauce plays a central role.
In Sardinian tradition, Malloreddus are often served with rich and flavourful sauces, but their versatility also makes them suitable for lighter preparations. They can be paired with meat ragùs, tomato-based sauces, recipes featuring aged cheeses, or interpretations inspired by seafood cuisine. The structure of the pasta shape makes it possible to enhance different types of sauces while maintaining its distinctive gastronomic identity.
To best appreciate their characteristics, Araj recommends a cooking time of approximately 9 minutes, keeping the pasta al dente and draining it promptly. This helps preserve the characteristic texture of the pasta shape and enhances its particular ability to hold sauces. Each pack therefore contains one of Sardinia’s most representative pasta specialities, produced through traditional methods that combine artisanal expertise with careful attention to the quality of the raw material.
