Features:
The thistles are a very popular plants in Sardinia. They begin to bloom the first months of the year around March and April, and flowering lasts until the beginning of May; the extremely wide spread throughout the region, we find the thistle plants primarily in river areas, pastures and uncultivated countryside.
The appearance can vary from a thorny white flower held by a slender stem 30 or 40 cm, in plants of considerable size (about 150 cm) from purplish red flowers that change color depending on the maturity of the flower. Some of these species are collected to be preserved in oil, as you do with the artichoke flowers.
Appearance:
The thistle honey is amber in color, from more or less light colors; It crystallizes when its color turns into much clearer tones; the crystallization is usually quite rapid, changing into a fairly compact mass of amber color.
Taste and aroma:
The intense aroma reminiscent of the flowers of the rich Mediterranean countryside of sweet scents. The aroma is very rich and slightly spicy: reminiscent of cinnamon and a light whiff of nutmeg; It shows a very sweet floral component reminiscent of red fruit jams and a stronger and more subtle as soon as tanned leather. In the gorge releases all its character with a strong and distinctive bouquet and releases a very sweet and persistent flavor.
