The selection of durum wheat grown in Lazio follows strict quality criteria, favoring varieties that give the semolina a naturally amber-yellow color and a high gluten content, which is essential for maintaining the pasta's physical structure after cooking. The water used in the dough comes from the pristine springs of the Central Apennines, a technical element that contributes to the purity of the final flavor.

    The bronze-die extrusion stage is at the heart of the artisanal production of Strampelli Rigatoni.
